4 Cod Fillets
1 Cup Panko Bread Crumbs
2 Tlbs fresh dill or 2 tsp dried
1 tsp parsley
1/4 cup light miracle whip or mayo
2 tsp Dijon mustard
1 Tlbs fresh lemon juice
Salt & Pepper to taste
Preheat oven to 450 degrees. Toss the panko crumbs with 1/2 of the dill and parsley. In a separate bowl, mix the remaining dill, parsley, mayonnaise, mustard and lemon juice together.
Pat the cod dry with paper towels, then season with salt and pepper. Lay the cod in a baking dish sprayed with cooking spray.
Brush the fish with the mayo mixture.
Sprinkle and press the crumbs into the mayonnaise.
Bake until the crumbs are golden brown and the fish flakes, about 20 minutes.
