500g Frozen Quorn pieces (Vegetarian) or cubed Chicken
Jar of organic Red Pesto
100g Basmati rice
Splash of Olive oil
To make perfect rice use this ratio: one cupful of rice to two cupfuls of hot water. Rinse the rice in cold water using a sieve then add to a pan of boiling water. Stir, put lid on then turn down heat to slowly simmer for 15 mins. Turn off heat and place a clean tea-towel over instead of lid. (this takes the moisture out of the rice leaving in less sticky).
While rice is simmering, fry the chicken pieces in olive oil and add a bit of water if sticking to pan for 5-10mins, keep stir frying until cooked through. Add two large tablespoons of pesto to chicken. (you can add cooked veg too such as sweetcorn or peas at this stage if you want). Stir in rice and mix it all up.
Left overs can be eaten cold with salad.
