Fruit Pizza

Fruit Pizza with a shortbread crust, a thin layer of sweetened cream cheese & yogurt, fruit of your choice, and a lightly sweet jelled top

Ingredients

Crust:
½ cup powdered sugar
1 ½ cups flour
¼ tsp salt
¾ cup butter, softened
½ tsp vanilla extract

Filling:
6 oz cream cheese, softened
2 oz plain yogurt( or fruit yogurt of your choice has to be thick)
2 Tbs powdered sugar
1 tsp vanilla extract

Jell Glaze:
½ cup sugar
2 Tbs Clear gelatin(or corn starch)
2 tsp lemon juice
1 ½ cups clear fruit juice ( your choice)

Prep the fruits of your choice in slices if only using berries they will not need slicing.

Method

Using a blender, mix ½ cup powdered sugar, flour, salt, butter and ½ tsp vanilla for the crust. Press onto a pizza pan. Bake for 10-15 minutes in a Preheated over @325°F. Let the crust cool completely.(about 10 minutes in a cool room)

While the crust is cooling you can combine cream cheese, plain yogurt, 2 Tbs powdered sugar, and 1 tsp vanilla. to spread over the fully cooled crust, place fruit around the crust get creative =)

To make the final step the Jel, combine sugar, gelatin or cornstarch witch ever one you have chosen, lemon juice and fruit juice in a small saucepan. Cook over medium heat until sugar is dissolved and mixture is thickened. Cool and spoon over fruit, you may have more jell then needed but thats ok. Chill to let the pizza pie set.
