Difficulty: Easy - for beginners
Serves: 4 to 6
Spicy Meat filling (Makes 2 cups. Use one now and freeze the other)
1 lb ground chuck
1 medium onion
2 garlic cloves,minced
1 sm chili pepper, minced OR 1/8 cayenne
2 tablespoons chili powder
1/2 teaspoon ground cumin
3/4 teaspoon salt
1 cup tomato sauce
1 cup Spicy Meat Filling
6 oz. tortilla chips (half of a 12 oz bag)
1 cup shredded sharp Cheddar Cheese
1/2 cup tomato salsa
1/4 cup sour cream
Sliced pickled jalapeno peppers
Meat Filling prep.
1. In a large skillet, cook ground chuck, onion, garlic and chile pepper over medium high heat, stirring often, until meat is no longer pink, about 5 minutes. Add chili powder, cumin, salt and cook for one minute. Add tomato sauce and cook, stirring often, until thickened, about 5 minutes.
2. Preheat oven to 400. Spread half of tortilla chips over bottom of a 10-inch glass pie plate. Spoon 1/2 cup meat filling over tortilla chips, and sprinkle with 1/2 cup cheese. Repeat with remaining chips, meat filling and cheese.
3. Bake until cheese is melted, 5 to 8 minutes. Spoon dollops of salsa and sour cream over top and garnish with jalapenos. Serve immediately.
NOTE: Nachos can be cooked in microwave. Microwave on high for 1 minute or until cheese is melted.
