Cilantro Butter

Perfect on any thin fish such as haddock, sole, tilapia, flounder, etc.

2 tablespoons of butter, softened
2 tablespoons fresh cilantro, chopped finely
1/2 teaspoon of grated lemon rind (the yellow part of the lemon)
1/4 teaspoon of paprika
1/8 teaspoon of salt


Combine all ingredients and stir until well blended. Spoon about 2 teaspoons onto hot fish
