Spinach Cornbread

1 egg
1 1/2 cups 2% cottage cheese
2 T melted butter
1 (10 oz) package chopped frozen spinach, thawed and drained
1 (8.5 oz) package cornbread mix (such as Jiffy brand)


Preheat oven to 400 degrees. Spray and 8- by 8 inch pan with nonstick cooking spray and set aside.

In a mixing bowl, whisk egg, cottage cheese and butter together. Stir in spinach and mix until well incorporated.

Pour in cornbread mix and stir until just blended. Spread the thick batter into prepared pan.

Bake for 30 to 35 minutes, or until cornbread is golden brown on top. Serve with honey
