Pineapple Upside Down Cake

Ingredients

Cake:
1 cup butter
1 ½ cups brown sugar
4 eggs
1 Tbsp. vanilla
2 tsp. orange rind
2 ½ cups flour
½ cup toasted chopped pecans
1 Tbsp baking powder
¼ tsp. cinnamon
1 cup milk

Topping:
Can of pineapple rings
Maraschino cherries
¼ cup melted butter
¾ cup light brown sugar

Method

Cake: Beat together first 4 ingredients-adding eggs one at a time. Mix dry ingredients together and add alternately to butter mixture with milk. Beat well. Set aside.

Topping:Whisk butter and sugar together. Spread on bottom of 9x13 cake pan. Arrange pineapple rings with cherry in the middle of each one.

Pour cake batter over fruit and bake in 350 degree oven for about 55 minutes.
