Couscous Salad

my version :) - after 4 attempts (beginning with the box recipe) ,,, I have it as I like it. Hope you like!!

Difficulty: Easy - for beginners
Serves: 8-10


1 box Couscous, cooked
1/2 c dried cranberries (put in with dried coucous before you add water)

1/2 red pepper, finely chopped
2 tsp Vidalia onion, finely chopped
1 cucumber, finely chopped
1/2 tomato, finely chopped (can use a whole but it overcrowds the taste)
1 TBSP jalepeno, finely chopped or grated - optional
2 TBSP Olive oil

1/4 c Rice Vinegar
2 tsp sugar

1/2 c feta cheese or Queso Fresco :)
1/2 c shaved almonds, optional


Prepare couscous as directed on the box - add cranberries (I like to add dried cranberries for a bitter/sweet taste)

Once couscous is ready and vegetables are all finely chopped, mix together with couscous.
NOTE: cut tomato and cucumber first and set aside onto paper towels to absorb excess water (if not, salad will be too runny)

Add sugar to vinegar and stir well. Drizzle the vinegar and Olive Oil onto the couscous mixture. Mix well to cover each morsel of couscous. :)

Add the almonds (for crunchy) and toss in the cheese.
