Difficulty: Easy - for beginners
1 large zucchini sliced
1 red capsicum sliced
1 green capsicum sliced
2 onions sliced
2 tomatoes sliced
1 small head broccoli and 1 small cauliflower, cut into flowerettes
1 can cream of celery soup
300ml lite cream
1 cups grated tasty cheese
1 pkt spring vegetable soup mix
Layer the vegetables in a shallow oven proof dish, sprinkling each layer with spring vegetable soup mix.
In a jug, mix together the can of soup and the cream.
Pour over the vegetables.
Top with the grated cheese.
Bake at 180C for 40 minutes or till vegetables are cooked.
Tip: Cover and microwave on high for 20 minutes if desired
