Cheddar & Potatoes Breakfast Bake

Ingredients

4 c. frozen Potatoes O'Brien with onions & peppers, thawed
5 sliced bacon, cooked and chopped
1 c. Bisquick Mix (Heart Smart)
1 1/2 c. Sharp Cheddar Cheese, shredded (6 oz)
3 c. milk (2%)
1 c. egg or 1 c. fat-free egg product
1/8 tsp. ground pepper

Method

Preheat oven to 375 degrees F.

Spray a 13 x 9 inch glass baking dish with cooking spray. In a medium bowl, mix uncooked potatoes, 1 cup of the cheese and the bacon. Spread into the baking dish.

In same bowl, stir Bisquick, milk, egg and pepper until blended. Pour over potato mixture. Sprinkle with remaining 1/2 cup cheese.

Bake 30 to 35 minutes or until light golden brown around edges and cheese is melted. Let stand 10 minutes before serving.
