Marianne's Smashed Potatoes

Roasted crispy flavorful squished little new potatoes my cousin Marianne makes and passed on the recipe to me.

Ingredients

small whole potatoes
olive oil
kosher salt
coarse ground black pepper

Method

Boil as many whole sm to med size potatoes per person as you wish (1 to 2 per person) until soft. Do not peel potatoes.
Drain potatoes well. Heat oven to 400.
Grease a cooking sheet with oil or spray with no-stick cooking spray. Place the whole little potatoes on the cooking sheet and gently squish each with the bottom of a glass until potato is smushed.
Drizzle olive oil over all potatoes. sprinkle with salt and pepper.
Bake aprox 30 to 40 mins until crispy and browned on top.

* may add a little chopped garlic for flavor or any herbs of your choice.
* Flavorful little potatoes good as a side dish for any type of meat that can be adjusted for just 2 or a crowd for supper.
