Difficulty: Easy - for beginners
1 avocado,pitted, peeled and diced
1 tsp. lime zest
1 tbsp. fresh lime juice
8 oz. imitation crab, flaked or chopped
2-3 tbsp. fresh cilantro
1 Roma tomato, seeded and diced
2 tbsp. ranch or Caesar dip
1/4 tsp coarsely ground pepper
2 (1 lb) cooked polenta, sliced into thick rounds OR 1 baguette, sliced
Extra chopped fresh cilantro
1. In a medium bowl, combine avocado, lime zest and juice, toss to coat. Add crab meat, tomato, cilantro, dip and pepper. Cover and chill for 15 minutes.
2. Coat grill rack with non-stick cooking spray. Preheat grill to 350-400. Grill polenta (or baguette) 2-3 minutes on each side or until lightly charred and heated through.
3. n Spoon crab mixture onto polenta or baguette slices. Sprinkle with extra cilantro and serve.
