Difficulty: Easy - for beginners
1/2 cu[ mayonnaise
2 tablespoons grated Parmesan cheese
2 teaspoons grated onion
1 teaspoons Dijion-style mustard
8 slices pumpernickel bread, heavy Phalion or German-style
2 tablespoons butter or margarine
Stir together mayonnaise, Parmesan cheese, onion and mustard. Cut pumpernickel into quarters. Heat butter in skillet. Saute pumpernickel squares for 2 minutes until crisp on one side. Remove. Spread soft side of bread with mayonnaise mixture. Place on cookie sheet. Broil about 4 inches from source of heat until mayonnaise mixture is browned. Serve immediately.
