Difficulty: Easy - for beginners
olive oil, 2 tbsp
onion, 1, sliced
broccoli, 1 pound, chopped (or cauliflower)
garlic, 2 cloves, minced
salt and pepper
white white (vermouth), 1/2 c.
vegetable stock, 3 c.
vegan milk / cream / sour cream, 1 c.
1. Heat oil and saute onion, broccoli, garlic, salt, pepper.
Cook to soften onions, 5-10 min.
Add white wine, cook 1 min, add stock, cook until broccoli is tender, 10-15 min.
2. Puree soup in blender.
3. Stir in cream, adjust seasonings, serve.
