Banana Chocolate Chip Mini-Muffins

Very incredibly moist mini-muffins.

Ingredients

1 egg, beaten
2 ripe bananas, mashed
1/2 cup vegetable oil
1/3 cup milk
1/2 tsp vanilla extract
1/2 tsp almond extract
2 cups flour
1/2 cup sugar
1 Tbsp baking powder
1 tsp salt
1/2 to 3/4 cup mini chocolate chips

Method

Heat oven to 400 degrees
In a large bowl, beat an egg.
Mash a banana until it is like a wet paste
Add oil, milk, vanilla and almond extracts.
Add flour, sugar, baning powder and salt.
Mix well.
Stir in mini chocolate chips.
Spray 2-12 cup muffin tins or 1-24 cup muffin tin.
Fill muffin cups 3/4 full to full.
Bake 15 to 18 minutes, until golden brown on top.
Cool and serve!
