1 cup cooked quinoa
1 tbsp olive oil
3/4 tbsp red wine vinegar
1 small clove garlic, minced
Salt and pepper to taste
1 C. chopped onions & veggies to your liking: scallions, red/green peppers, mushrooms, radishes, sautéed spinach
Cook quinoa according to package directions & let cool for 20-30 minutes.
Mix dressing of your choice & veggies in with cooled quinoa. Taste & adjust seasonings if necessary. Serve immediately.
