Artichoke Pesto and Tuna Noodles

Ingredients

1 pkg Catelli Healthy Harvest egg white noodles
4 cups green beans, trimmed and halved
2 cups marinated artichoke hearts, drained
2 cups parsley leaves
1/2 cup parmesan cheese
2 tsp lemon zest
1/4 cup lemon juice
3 large cloves of garlic
1/2 tsp. salt
1/2 tsp pepper
1/3 cup vegetable oil
3 cans cloverleaf tuna in water, drained
1 cup red onion, thinly sliced

Method

1. Cook pasta according to package directions
2. Add the green beans during the last few minutes of cooking.
3. Drain the pasta, saving 1/2 cup of the water, keep warm
4. Combine the artichoke hearts, parsley, parmesan, lemon zest, lemon juice, salt and pepper ina food processor until finely chopped. slowly pour vegetable oil and the reserved pasta water into the bowl, blend until mixture is smooth
5. Break tuna into bite sized pieces. Toss the pasta and green beans with the pesto mixture, tuna and red onion.
6. Serve warm
