Sesame Salmon Spaghetti Toss

1 pkg Catelli healthy Harvest spaghetti
2 tbsp. vegetable oil, divided
1/4 cup soy sauce
2 tbsp. lime juice
2 tbsp. sesame oil
2 tbsp. minced fresh ginger
1 red pepper, thinly sliced
1 yellow pepper, thinly sliced
3 cups chopped bok choy or napa cabbage
1 cup trimmed snow peas
2 cans cloverleaf sockeye salmon, drained
1/2 cup sliced green onions
2 tbsp. toasted sesame seeds


1. Cook the spaghetti according to package directions
2. whisk 1 tbsp of the vegetable oil with the soy sauce, lime juice, sesame oil and ginger, set aside
3. heat the remaining oil in a wok or deep, nonstick skillet over medium-high heat. Add peppers, bok choy or cabbage, and snow peas. Stir fry for 5 minutes or until tender crisp.
4.Discard the skin and bones from salmon. add warm pasta, salmon, green onions, and reserved sesame oil mixture and gently toss to coat. Sprinkle with green onions and toasted sesame seeds and serve immediately
