Moroccan Tunesian Rice

Ingredients

1 tbsp. olive oil
4 cups M & M Rice and Vegetable medley, thawed
1 cup dried fruit (apricots, raisins, cranberries, and dates)
1/2 tsp. cinnamon
1/2 tsp. ginger
1/2 tsp. salt
1/2 tsp cumin powder
slivered almonds for garnish

Method

1) cut the apricots and dates to the size of the raisins
2) soak all the fruits together in hot water
3) saute the rice in oil using a large non stick pan
4) add spices and stir well
5) add fruit and 1/4 cup fruit water, warm through
6) Serve topped with almonds
