Asian Style Stuffed Bell Peppers

4 large red or green bell peppers
1/4 cup chopped onion
3 tbsp. chopped parsley
2 tsp. peeled, grated gingerroot
1 lb ground turkey
1 tbsp. worcestershire sauce
1 tbsp. soy sauce
1 cup cooked rice
1 can tomato sauce, divided


1) Preheat oven to 350*
2)Cut stem ends from peppers, cover in boiling water 1 minute
Drain upside-down on paper towels
3)In skillet sprayed with nonstick cooking spray, cook ground turkey and onion until turkey is browned and no longer pink;drain fat
4)Combine turkey mixture, 2 tablespoons of tomato sauce, ginger, worcestershire sauce, and soy sauce in large bowl. Stir in rice, 1 cup of the tomato sauce, parsley, and salt and pepper to taste
5)Stuff peppers with rice mixture. Place upright in a casserole dish sprayed with nonstick cooking spray. Takeremaining tomato paste, mix with 2 tbsp water and Spoon sauce over stuffed peppers. Cover and bake for 25-30 minutes or until heated through.
