Cooking time: 4 hours
1.25lbs Chicken Tenderloins
1/2 (large) can pineapple tidbits with juice
1 sliced green bell pepper
3 cut up cherry tomatoes (or 2 tbsp diced tomatoes)
3-4 tbsp (sugar free) orange marmelade
1-2 tbsp balsamic vinegar
1-2 tbsp (lower sodium) soy sauce
1 crushed garlic clove
1 tsp ginger
add all ingredients to the crockpot, spreading the marmelade evenly over the chicken, cover and cook on high for 4 hours.
I cooked it on low for 5.5 hours and the chicken was falling apart! I like it that way, but if you don't like your chicken flaking then lower the cook time.
