Crock Pot Gumbo - HEALTHY

In case you haven't noticed by now, i'm all about healthy stuff! enjoy!

Preparation time: 15 minutes
Cooking time: 4 hours

Serves: 4


2 links Italian Turkey sausage
1-2 cups shrimp, baby, precooked
(you could just as easily add some chicken too!)
3/4 cup canned diced tomatoes
1/2 diced bell pepper
2 cups okra
2 cup chicken broth (I used water with sodium free chicken brullion powder)
1 clove crushed garlic
dash of dried onion
dash of garlic powder
dash of cayenne pepper
2 tbsp rotel OR diced green peppers
Dash of hot sauce (tobasco sauce)
1 tbsp corn starch


1. brown the sausage in a pan sprayed w/ cooking spray (you can use olive oil, but it adds significant calories)
2. brown the okra in pan of cooking spray
3. Brown the shrimp in pan of cooking spray
4. mix all ingredients in a dutch oven/ crock pot
5. cook until veggies are tender and meat is cooked. (I did 4 hours on low in my crockpot)
6. serve in a bowl over rice if desired

This recipe can be doubled VERY easily to make lots of gumbo! My husband ate 3 helpings and i didn't have to feel bad because it still only had like 600 calories!
