4 cups shredded cheddar cheese
4 eggs, beaten
3 canned jalapeno peppers, seeded & chopped
1 (2 oz.) jar diced pimiento, drained
1 tsp. minced onion
Combine all ingredients in a medium bowl; mix well. Spread mixture in a lightly greased 8 in. square baking dish. Bake at 350 degrees for 30 to 40 minutes; let stand 10 minutes. Cut into squares and serve immediately.
