Serves: 4


3-4 lbs lean lamb, beef, pork, or chicken, cut into 1-inch cubes
3 medium onions, quartered
2 green peppers, quartered
2 cups cherry tomatoes, whole
Marinade sauce (optional)

Marinade Sauce:
1/2 cup olive oil
1/4 cup lemon juice
1/2 cup red wine
3 cloves garlic, finely chopped
1 onion halved\3-4 tsp oregano
salt and pepper to taste

Tzatziki Sauce:
1 head of garlic, crushed
2 cups plain yogurt
1 large cucumber, chopped fine
3 tbsp olive oil

*I also enjoy using pineapple for chicken, but it's up to you


1) Place in random order on skewers: meat, tomatoes, onions and green peppers, pineapple if using
2)Arrange skewers in a pan with a marinade sauce if desired
3)Refrigerate for a few hours before cooking, or overnight
4) grill until meat is done, start Tzatziki sauce

Marinade Sauce:
Combine all ingredients into a bowl, Mix well, pour over meat

Tzatziki Sauce:
1) Thoroughly mix garlic, olive oil, add to the yogurt
2) add chopped cucumber to the yogurt mixture
3) Refrigerate for 2 hours before serving
