Chicken Caesar Potato Salad

Serves: 4-6 servings


4 boneless, skinless, chicken breasts, baked, or BBQ'd
1/2 cup parmesan cheese
1/2 cup mayonnaise
2 tbsp. red wine vinegar
2 tsp. Worcestershire Sauce
1 tsp. dijon mustard
2 cloves garlic
3 lb small red skinned potatoes
6 slices of bacon, fried until crisp
1/3 cup sliced reen onion
1/3 cup finely chopped parsley


1. Cook Chicken
2. In a small bowl, whisk together Parmesan, mayonnaise, vinegar, Worcestershire sauce, garlic, mustard and pper. Cover and refrigerate
3. Cook unpeeled potatoes in boiling salted water until tender; drain and cool. Slice potatoes; place in large bowl
4. Fry bacon until crisp; do not drain. Add to potatoes with onion, parsley, and parmesan mixture; toss to coat.
5. Slice chicken and combine with salad.
