Fennel and Tomato Chicken Salad with Orange and Pine nuts

3 cherry tomatoes, quartered
2 cups lettuce
1 chicken breast1 mandarin orange or tangerine, peeled and seperated
1/2 cup thinly sliced fresh fennel bulb
3-4 torn basil leaves
coarse grain mustard or buttermilk vinaigrette
toasted pine nuts or slivered almonds for garnish


1. Cook chicken breast
2. Prepare remianing ingredients to combine with chicken when ready to eat.
3. Add vinaigrette and garnish when ready to serve
