Garlicky Chard

This was a suggested side for a steak dish in Everyday Food, April 2011. Although I did not care for the steak, the chard was outstanding. My 15 year old son even enjoyed it!

Serves: 4


1.5 pounds Swiss chard (I used red chard since the store was out of Swiss)
2 teaspoons of extra-virgin olive oil
3 garlic cloves, thinly sliced
salt and pepper to taste


Rinse chard well to get rid of all grit. Tear leaves into bite-size pieces and cut stems into 1/2-inch pieces.

Heat skillet over medium heat. Add olive oil and garlic slices and allow garlic to saute for a few minutes. Add chard stems and cook, stirring occasionally, until crisp-tender (for about 3 minutes).

Add the chard leaves. Season with salt and pepper.

Cover, reduce heat slightly, and cook until leaves are wilted (about 3 minutes).
