Beer Can Chicken

Baked chicken with beer can inside comes out delicious and tender as rottisserie chicken!

1 whole chicken
1 can of beer (any kind)
8 oz. chicken broth (optional)
1 onion, quartered
4 cloves of garlic, crushed
4 fresh sprigs of rosemary and/or thyme
1/4-1/2 cup of seasoned salt OR salt, pepper, garlic and onion powder and/or additional seasonings of your choice (for dry rub)


Preheat oven to 350 Deg. F
1. Mix seasonings in small bowl (salt, onion, garlic powder, etc.)
2. Open beer can and pour about one third of it out to cover bottom of glass baking dish, also pour chicken broth (optional)
3. Rinse and pat dry chicken, remove guts
4. Insert can into chicken's butt and set upright in baking dish
5. Generously rub dry rub (seasonings of choice) on chicken
6. Make a slit on each side of chicken to tuck wings into for more even cooking...while you're at it slide a couple fingers under the skin of the chicken's breast area and put a sprig or two of fresh thyme or rosemary and some garlic. A couple slices of lemon or orange may also be added under skin as well
7. Place a sprig or two of thyme/rosemary and some onion and garlic in cavity of chicken, but make sure there is still room for steam from beer can to escape and work its magic. Extra onion can be placed under chicken if needed to keep upright
8. Roast in preheated oven for about an hour and a half

Allow chicken to sit for about 10 minutes before removing beer can and carving. The pan drippings make good sauce or gravy.

*can also be made on a grill for a few hours over low heat
