Glady's Raw Apple Cake

Moist and studded with fruit and walnuts, it's great with coffee or tea. A dollop of sweetened whipped cream makes it a memorable after dinner dessert. My grandmother has baked this version of the classic for decades.

Cooking time: 45 min.

4 c. apples (cooking, like Black Twig, Gravenstein, Granny Smith, etc.) peeled and diced small
2 c. sugar
2 eggs
1/2 c. vegetable oil
2 c. all-purpose flour
2 tsp. baking soda
1/2 tsp. salt
2 tsp. cinnamon
1/4 tsp. freshly grated nutmeg
2 c. chopped walnuts (check for shells)
2 c. chopped raisins (check for stems)


Preheat oven to 375 degrees. Toast walnuts on a baking sheet while oven is preheating. Mix diced apples with sugar and set aside.

Beat eggs lightly. Beat in oil. Sift in dry ingredients by thirds, stirring to incorporate after each addition. Stir in chopped raisins, toasted chopped walnuts, and apples and sugar. Pour into to a buttered and floured 12x9" pan.

Bake at 375 degrees for approximately 45 minutes, until a toothpick to the center comes out clean.
