Badger's Spanish Chicken

Simple, but so very tasty! Lovely with rice, mash or a jacket potato :o)

Diced chicken (I use chicken mini fillets, 3 per person)
Green pepper
Handful fresh coriander
Olive oil
1 garlic clove
300ml chicken stock
2 tsp smoked paprika
1 tsp tomato puree
2 tbsp creme fraiche


Brown chicken in a glug of olive oil.
Add onions, green peppers, coriander and garlic and cook until softened.
Pour over chicken stock, sprinkle in smoked paprika and add tomato puree.
Simmer until reduced.
Take off heat and stir in creme fraiche.
