Dietary guidance: v v n d
1 tbsp vegetable oil
1 tsp ground coriander
0.8 litres veg stock (ideally homemade not from a packet!)
Large handful roughly chopped fresh coriander
Heat the oil in a large pan and add onions and carrots. Cook for 3-4 minutes until softened.
Stir in ground coriander and cook for a further min.
Add vegetable stock and bring to the boil.
Simmer until vegetables are tender and stock has reduced.
Allow to cool and blend until smooth. Add chopped coriander.
