Mighty Mushroom Soup

This can be cooked on the stovetop or in a slow cooker...it was delicious with a slice of crusty whole grain bread. The recipe halves or doubles easily. Some garlicky croutons would probably be good sprinkled on top.

Ingredients

2 Tb olive oil
4 sweet onions, chopped sort of large
2 8 oz pkg sliced mushrooms - 2 cremini, or 1 button and 1 cremini, or 2 button This is a great place to throw in a handful of a new wild mushroom to see how it tastes for future reference.
10 cloves garlic, minced
4 Tb dry sherry
8 cups beef stock or vegetarian beef flavored broth (made from powder unless you can find prepared and prefer that)

Method

In a large skillet over medium-high heat, saute the onions and mushrooms 8 - 10 minutes until cooked down and fragrant. Add the garlic and cook, stirring 2 additional minutes. Add the sherry, then pour the vegetables into slow cooker or large pot. Add the beef broth, and on the stovetop heat to boiling. Reduce heat to low and simmer 30 minutes. In slow cooker, cook the soup 4 - 6 hours on low or 3 - 4 hours on high.
