Volcanic Almond Cake

An almond cake that tries to improve what the classical "tarta de santiago" is missing: Moist and air.

140g ground almonds
80g wheat flour
60g melted butter
130g sugar
3 eggs
1 tsp vanilla sugar
1/2 tsp baking powder
1/2 tsp cardamom
a bit of salt
some coarsly ground almonds


Blend all ingredients but the coarsly ground almonds until everything is a fluid, sticky dough. Grease medium-sized cake pan with butter and put some coursly ground almonds on it. Fill in the dough and add some more almonds on top of the dough.

Bake for about 20-40 min at 175° (depends a lot on your oven - monitor it closely). It may be that the cake rises a lot and stuff comes out at the top (see image). That's why I call the cake "volcanic". Enjoy.
