Whole Steamed Artichokes with Lemon Garlic Dressing

A perfect springtime recipe, this dish pairs well with Verdelho, Roussanne and Sauvignon Blanc

4 Whole Artichokes, stem & leaves trimmed
2 Garlic Cloves, minced
Zest of 1 lemon
2-3 Tablsp. Lemon Juice, freshly squeezed
1/3 C. of good quality virgin Olive oil
Pinch of Salt and black pepper (to taste)


Trim stem and leaves of artichokes. Into a pot of boiling water, put artichokes and cook on low boil for approximately 30-40 minutes. Drain into a colander and cool to room temperature.
Arrange on platter and pour Lemon Garlic Dressing over the artichokes and serve on a bed of butter lettuce. (serves 4).

Lemon Garlic Dressing:

Into a small bowl, squeeze juice of 2 lemons, add minced garlic and seasonings (salt & pepper). Slowly (in a dribble) whisk 1/3 C. virgin olive oil. Add zest of 1 lemon and mix into dressing. Pour dressing over artichokes.
