Difficulty: Easy - for beginners
Serves: 8 crab cakes
1 lb jumbo lump crabmeat fresh (it's expensive around $20/lb but well worth it)
10 tbsp Progresso Italian Style bread crumbs or pic-a-pepper seasoning
4 oz. heavy whipping cream
1.Mix the crumb meat with the the Progresso bread crumbs or the pic-a-pepper spice (not both)
2.Put the eggs in the mix, discard the whites, add the whipping cream.
3.If the mix is too soft add some crumbled white dry bread.
4.Form the crab cakes, it makes about 8, and place in the refrigerator to firm.
5.Fry in a pan in light heat with butter until light brown.
6.Serve with fries or cole slaw
