Difficulty: Easy - for beginners
4 cups chick peas
5 cloves of garlic very finely minced
juice of one lemon
¼ cup of tahini
¼ cup of Extra Virgin Olive Oil
1.Place chick peas in a large pot of water and sit overnight.
2.Drain the water in the morning.
3.Return the chick peas to the pot and add salt and fresh water.
4.Bring to boil, then simmer for about one hour until the beans are soft and tender.
5.Drain the water and save the cooking liquid.
6.Place the cooked beans in a food processor, add the garlic, lemon, tahini and ¼ to a ½ cup of the cooking liquid.
7.Add the oil slowly until a smooth paste is formed.
