Difficulty: Easy - for beginners
Dietary guidance: v
1/2 onion, small dice
2-3 large carrots small dice
2-3 celery sticks small dice
3 cloves garlic
1/2 red pepper
1 c red wine
2-3 cans black beans, drained and rinsed
1 c pureed pumpkin or sweet potatoes
1 can diced tomatoes
4 cups vegetable broth
2 Tablespoons Italian herb mix
hot sauce to taste
salt and pepper to taste
Saute onion, celery and carrots in olive oil for 2-3 minutes, add garlic saute for 1 more minute.
Add red wine, simmer until it reduces by half.
Add remaining ingredients, bring to boil, then reduce heat and simmer for 30 minutes.
Season salt and pepper. I usually let individuals add their own hot sauce.
