8 red skin potatoes
5 carrots diced
one onion chopped
one yellow squash diced
one zucchini diced
one cup shredded cheddar
one egg stirred
1/4 cup cream
salt, pepper, garlic
coconut oil
one pound grass fed beef ground


cut and boil potatoes with the skin on ..
brown the ground beef , onion and garlic in coconut oil season with salt and pepper
add diced carrots, yellow squash and zucchini cook til soft
mash the potatoes with cream, mash in the one egg and 3/4 cup of shredded cheese to the potatoes
layer the ground beef and vegetable mix in a 9x13 glass dish
top with the mashed potatoes and the remaining cheese
bake at 350 for 30 min til top starts to brown slightly
