Avocado Dip

Quick and easy avocado dip that follows the feingold diet principles.

Ingredients

1 ripe avocado, peeled, pitted and chopped (save seed and place in finished dip until serving to prevent discoloration)
1/4 small onion
4 tbs pure olive oil
3 tbs lemon or lime juice (natural, best to get limes and squeeze them)
1/8 tsp salt

Method

Place all ingredients in a blender and blend at medium speed for 30 seconds. Refrigerate.Serve with fresh vegetable or PURE tortilla chips (those without preservatives, chemicals or dyes.)

Makes approx 1 cup
