Carrot Spread

Ingredients

1/2 cup peeled and grated carrots
1 hard-boiled egg grated or pressed through a sieve
1/2 tsp lemon juice
1/2 tsp peeled and grated onion
2 tbs homemade mayonnaise

Method

In a small bowl, mix all the ingredients together very well. Cover and refrigerate until ready to serve

Makes about 3/4 cup.
