Cheese Roll

1 pound white cheddar cheese, grated
1 3 ounce package cream cheese, softened
dash garlic juice (optional)
2 cups pecans, finely chopped


The day before serving, in a large bowl, beat together the cheeses and the garlic juice until well blended. Shape into a roll 1 1/2 inches in diameter.

Cover a double thickness of 11-by-8-by-15 inch waxed paper generously and evenly with the chopped nuts. Place the roll in the center of the paper, carefully bring up the sides of the paper to wrap the cheese roll and boar it with the nuts. Refrigerate, letting the roll ripen for at least 24 hours.

Serve with crackers or toast. Serves 12.
