Mustard sauce

Follows feingold diet. Great sauce for vegetables. Use instead of butter.

Ingredients

1/2 tsp dry mustard
1/2 tsp all-purpose flour
1/4 tsp salt
2 egg yolks, beaten
3/4 cup milk, heated
2 tbs white distilled vinegar

Method

In top of a double boiler, over hot but not boiling water, mix the mustard, flour and salt. Add the beaten egg yolks and mix together well with a wire whisk or fork. Slowly add the hot milk, and cook, stirring constantly, until thickened. Slowly add the vinegar, stirring constantly to mix well.

Serve warm over green beans, cauliflower or other vegetables. Yields 3/4 cups.
