Jumbo Shimp with Red Curry

Thai-style curry soup with shrimp and stir fry vegetables

Serves: 4


-5 shrimp per person
-stir fry vegetables
-2 tsp thai red curry paste
-200ml coconut milk
-roasted sesame seed oil

-sprinkling of salt and pepper
-pinch cayenne powder
- coriander


1. Clean and butterfly (split lengthways) the shrimp
2. Heat wok pan very hot
3. A swirl of oil on the pan
4. Throw in the vegetables
5. Stir for 2 mins
6. Add shrimp and stir
7. Add coconut milk, red curry paste and cayenne
8. Cover and let simmer for 4 mins
9. Add salt and pepper
10. Modify if needed
11. Place in serving dish and sprinkle fresh coriander
