Garlic Mashed Potatoes

2 1/2 lbs russet or Yukon Gold potatoes, Peeled and cut into quarters
1 whole garlic bulb
1 Tbsp olive oil
1/2 c sour cream
2 Tbsp butter
salt and pepper to taste
fresh chives, chopped, for garnish


Preheat oven to 375. Place potaotes in a large pan of lightly salted water. Bring to a boil. reduce heat and simmer until cooked through, about 20 minutes. Meanwhile, separate cloves of garlic but do not peel them. Place them in a baking dish and toss them in the olive oil. Roast in oven until softened, about 10 minutes. Allow them to cool. Drain potatoes and return to pot. Mash slightly. Add sour cream and butter. Quickly squeeze pulp from garlic cloves intot he pot. Add salt and pepper. Mash potatoes (I use mixer) unitl combined and smotth. Of course, I add more butter and sour cream. Transfer to a serving bowl and top with chopped chives.
