Difficulty: Easy - for beginners
6 TBSP Butter
1 TBSP chopped Onion
5 TBSP Flour
1 Cup Chicken Broth
2 Cups Milk
3/4 TSP Salt
Dash of Pepper
1 PKG (10 oz) frozen Broccoli, thawed; or fresh chopped Broccoli
6 oz. Velveeta Cheese
Cook Broccoli until tender, but still crisp.
In large saucepan, over medium heat, cook Butter and Onion until soft. Blend in Flour. Gradually add Chicken Broth, Milk, Salt and Pepper. Stir until smooth.
Add Velveeta Cheese, combine until smooth. Add Broccoli, heat and serve.
Substitute: Cauliflower for Broccoli.
