Ingredients

Chickpeas, dried, 3.5 c . Can substitute up to 1.5 c. dried fava beans
Garlic, 4 cloves, peeled and crushed.
Onion, 1 medium-large, quartered
Coriander, ground, 2 tsp
Cumin, ground, 2 tsp
Cayenne, if desired, 1-2 tsp
Parsley or cilantro, 1 c., chopped
Salt, 2 tsp
Black pepper, 1/2-1 tsp
Baking soda, 1 tsp
Lemon juice, 2 tbsp
Oil for frying

Method

1. Soak beans 24 hours.
2. Drain beans, combine with remaining ingredients except for oil in food processor, pulse until smooth. Keep mixture dry but add tbsp water if needed to process.
3. Heat oil med to med-high, 350 F.
4. Cook as balls or patties, about 5 min, turning once to brown on both sides.
