Whole Wheat Greek Yogurt Blueberry Pancakes

This is my new favorite pancake recipe! I usually like them with butter and maple syrup but I have been known to eat them plain, on the go or as a snack.

Pancakes can be frozen after cooking and reheated in the toaster.

Preparation time: 10 Mins.
Cooking time: 20 Mins.

Difficulty: Easy - for beginners
Serves: 2-3


3/4 cups Whole Wheat Flour
1/2 cups Rolled Oats
1 Tablespoon Sugar
1 teaspoon Salt
1/2 teaspoons Baking Powder
1/2 teaspoons Baking Soda
6 ounces Fat Free Greek Yogurt
2/3 cups Milk
2 Large Eggs
1 teaspoon Vanilla
1 cup Fresh or Frozen Blueberries


In a medium bowl whisk together dry ingredients (flour, oats, sugar, salt, baking powder, baking soda).

In a small bowl mix together the Greek yogurt, milk, eggs and vanilla. It should be a very thick but still be of pourable consistency.

Mix the wet ingredients into the dry ingredients until just mixed. Leave it lumpy!

Spray skillet with cooking spray and heat pan on low-medium heat.

Add blueberries to pancakes after pouring the batter into skillet and before flipping.
