Spinach Bean Soup

Ingredients

1 can (or 16 oz. prepared) kidney beans
1 can (or 16 oz. fresh) lima beans
1 can (or 16 oz. prepared) black beans
1 can (or 14 oz. fresh) sweet peas
14 oz. (or 1 lb.) fresh or cooked spinach
1 small can (or 7 oz. fresh) mushrooms
3/4 onion, cut into rings
3 cloves of garlic, minced
4 cups beef broth
1 tsp. sage
1 tsp savory
1 tsp. parsley
pinch of nutmeg
salt & pepper to taste

Method

Bring beef broth to the boil in a large saucepan. Reduce heat to medium, add all other ingredients. Simmer covered for 1 hr, stirring occasionally. Serves 6.
