Baked Blueberry Pancakes

I great twist to the normal blueberry pancakes and much faster too!

Preparation time: 20 min
Cooking time: 10-12 min

Difficulty: Easy - for beginners
Serves: 6


2 cups Bisquick Heart Smart Baking Mix (or pancake mix)
1 1/2 cup 1% milk
1 egg
1 T olive oil
1 tsp. ground cinnamon
1 cup fresh or frozen blueberries
Butter and Maple Syrup


Preheat oven to 400 degrees F.

In a large bowl, combine the Bisquick, milk, egg, oil and cinnamon just until combined (batter will be lumpy). Fold in the blueberries.

Spread mixture into a 15 in x 10 in x 1 in baking pan. Bake at 400 degrees for 10-12 minutes or until golden brown. Serve with butter and syrup.

NUTRITION FACTS: 1 serving (calculated without butter & syrup) equals 200 calories, 4g fat (1g saturated fat), 36mg cholesterol, 527mg sodium, 34g carbohydrate, 3g fiber, 7g protein.
