Spinach & red pepper gratin

Ingredients

3 pkg. frozen spinach, thawed (300g each)
1 white onion
12 asparagus spears
1.5 Tbsp butter
1.5 Tbsp olive oil
3 red bell peppers (or yellow or orange)
3 clove garlic (minced w/ jalapenos)
1 c. sliced mushrooms

1 c. whipping cream (or homo milk)
2 large eggs
1/2 c. blue cheese crumbles
1/2 c. shredded old cheddar
1/2 c. grated swiss or asiago
1/4 c. parmesan
1.5 tsp salt

Method

Chop onions; sautee in butter and olive oil, with garlic, until soft. Reduce heat to low, add chopped peppers asparagus, and mushrooms, stir.

Whisk cream, eggs, and salt together. Mix in cheeses. Pour into onion and pepper mix; stir in spinach until thoroughly mixed.

Cook uncovered in 350 oven for 50 mins or until a knife inserted in the centre comes out clean.
